Soup Kambing is one of my favorite local food that I would like to eat when I have the chance. However, most Indian Muslim food stalls that serve Soup Kambing don't get it right. The soup is either too diluted, the mutton too dry or too sinewy. At Haji Abdul Rajak Stall, the Soup Kambing Specialist that set up stall in Boon Keng since 1955, the Soup Kambing comes alive. The soup got perfect fluidity, not too peppery, and the mutton was really tender. Each piece of the mutton, even those that got attached with sinews were soft. So far, it's the best one I've eaten in Singapore. Remember to ask for a soup refill if you need more.

I have a weakness for soup kambing too. I would usually go Ayer Rajah Food Centre @West Coast for my fix. Soup kambing from some of the Indian-Muslim stalls there are really good too. It's liquid cholesterol. (:
Which stall in Ayer Rajah Food Centre would you recommend?
A Rashid Khan is pretty good! Other random stalls are rather decent too. Oh now you've got me craving soup kambing. (: Good thing is that most stalls are open for supper.
